Homogenizer

A "homogenizer" is a device or system generally used in liquid food production. This device is widely used especially in the milk, dairy and fruit juice industries and enables the homogenization of products.

It is an equipment or process that generally works under high pressure and reduces the size of oil particles in liquid food products, ensuring that the product has a more stable, high quality and homogeneous structure. Its main areas of use are the processing of milk and dairy products, fruit juice and other liquid foods.

Working Principle

-High Pressure Application: The homogenizer processes the product by passing it under high pressure. This pressure can generally vary between 1000-2500 bar.

-Mechanical Process: While the product passes through the homogenizer, it is processed under intense pressure by a specially designed mechanism. During this process, oil particles are reduced to small sizes.

-Reducing the Size of Fat Particles: The homogenizer breaks down the fat particles into very small sizes. This gives the product a more homogeneous structure, improves better dispersion and stability of oils.

-Quality and Shelf Life: The homogenization process improves the taste, texture and consistency properties of the product. It also increases the oxidation resistance by extending the shelf life of the product.

Applications

- Milk and Dairy Products: It is especially used in the production of products such as milk, cream and yoghurt. Homogenization of fat particles in milk improves the consistency of the product and regulates its taste.
- Fruit Juices: Homogenization of oil particles is important in fruit juice and beverage production, especially in the juices of oily fruits.

- Cosmetics and Pharmaceutical Industry: Homogenizers are also used in the production of cosmetic products and pharmaceuticals, and are necessary in these areas to increase the stability and effectiveness of the products.
